About the Recipe

Ingredients
1 lb beef tenderloin, medallions
1 pinch salt and pepper
4 oz blue cheese, crumbled
1 oz arugula
1 serving onion & bacon marmalade- see recipe
1 lb fingerling potato
1 oz herb seasoning
4 oz of vegetable oil
Preparation
Preheat the oven to 375°F.
Wash and chop the potatoes into small 1-inch pieces. Toss them with 3 oz of oil, salt, pepper, and herb seasoning. Arrange them on a baking sheet and bake for 30 minutes until they turn golden brown.
On a plate, season the beef with salt, pepper, and a bit of oil. Heat a skillet over medium-high heat and sear the beef on both sides until rare.
Transfer the beef to a pie pan and top with blue cheese and marmalade. Bake in the oven for 5 minutes until the cheese melts. Let it rest for a few minutes.
On a plate, arrange the arugula and place the beef on top. Surround the beef with the fingerling potatoes.
