Ingredients

Marinade:

2 teaspoons chopped garlic

1 oz lemon juice, real

2 tablespoons fresh oregano, chopped

2 oz olive oil

3 lb pork tenderloin

1 pinches salt and pepper


Topping:

2 cups grape tomatoes, sliced hamburger way

¼ cup red wine vinegar

1 teaspoon Dijon mustard

2 oz olive oil

1 English cucumber, diced

1 cup Kalamata olive, sliced

1 ½ tablespoons capers

5 oz feta cheese, crumbled

Preparation

Marinate the pork with garlic, lemon juice, chopped oregano, salt and pepper for 1-4 hours


Grill the pork off on all sides and then finish in the oven at 300℉ for about 20 minutes


Mix the vinegar, mustard, and olive oil in a plastic bowl. Add the tomatoes, cucumbers, olives, and capers to the dressing when ready to serve so the ingredients don't break down. Top the pork with salad mix and feta when serving
