Short Description
A rich and creamy potato soup loaded with crispy bacon, cheddar cheese, and a touch of seasoning for ultimate comfort.

Ingredients
4 cups potato, diced
4 oz bacon bits
½ onion diced fine
18 oz heavy cream
14 oz chicken stock
1 cup cheddar cheese
1 pinch salt and pepper
1 slurry
Garnish:
Green onions or fresh chopped chives
Preparation
In a sauce pot, cook the bacon over medium heat until it becomes crispy. Take the bacon out of the pan and set it aside. Leave only ¼ cup of the bacon grease in the pan.
Sauté the onions in the reserved bacon drippings over medium heat until they become translucent, approximately 5 minutes. Add the cubed potatoes and stir to coat them. Cook for 3-4 minutes, then return the bacon to the pan and pour in enough chicken stock to cover the potatoes. Cover and let it simmer until the potatoes are tender.
Once the potatoes are tender, pour in the cream and let it simmer for 10 minutes. Season and thicken with a slurry.
Remove from heat and stir in the cheese. Garnish with green onions or freshly chopped chives.
