Short Description
Enjoy a comforting bowl of creamy potato soup, made with baked potatoes, crispy bacon, cheddar cheese, and fresh green onions, all simmered together for a rich and satisfying flavour.

Ingredients
4 potatoes, baked and diced small
4 oz bacon by weight
½ small onion, finely diced
8 oz cheddar cheese
1 qt water
1 qt heavy cream
3 green onions, diced
5 teaspoons chicken base
1 pinch salt and white pepper
1 slurry
Preparation
Bake the potatoes in the oven at 400°F for approximately 45 minutes until they are soft. Allow them to cool, then dice.
In a stockpot, cook the bacon until the fat is rendered and the bacon is nearly crispy. Add the onions and sauté until they become transparent.
Next, pour in the water and cream, bringing the mixture to a low boil. Stir in the chicken base until it dissolves.
Add the cooked, diced potatoes and reduce the heat to a low simmer. Thicken the mixture with a slurry until it coats the back of a spoon. Stir in the cheese until it melts.
Remove from heat and add the diced green onions.
