Ingredients
1 ½ lbs chicken, grilled, small dice
1 pinch salt and pepper
1 oz vegetable oil
½ cup chutney
½ cup toasted walnuts or almonds
1 cup mayonnaise
1 teaspoon curry powder
1 tablespoon lemon juice
½ cup green onion
Preparation
Preheat oven 350ºF
Season and grill mark chicken breast and then bake at 350ºF for 20 minutes, then cool and dice ¼ by ¼ inch
Add all the ingredients in a bowl, except the nuts, and whip the sauce. Then add the chicken and the nuts and, fold them together, season to taste
Let stand overnight for a better flavour profile
