Ingredients
8 oz yellow rice
2 tablespoons olive oil
15 oz black beans, rinsed and drained
15 oz whole kernel corn, frozen, drained
2 teaspoons lime juice
1 teaspoon cumin
Preparation
Prepare the yellow rice as per the instructions.
In a non-reactive bowl, combine the oil, beans, corn, lime juice, and cumin. Once the rice is cooked, fluff it with a fork and incorporate it into the bean mixture. Season with salt and pepper to your liking.
