Ingredients
8 oz yellow rice
2 tablespoons olive oil
15 oz black beans, rinsed and drained
15 oz whole kernel corn, frozen, drained
2 teaspoons lime juice
1 teaspoon cumin
Preparation
Cook the yellow rice according to the directions
In a non-reactive bowl, mix the oil, beans, corn, lime juice and cumin. When the rice is ready, fluff it with a fork and then mix it into the bean mixture, season to taste with salt and pepper
