Ingredients
1 qt black beans, washed
⅓ cup diced red bell pepper or roasted red pepper
1 oz lime juice
¾ oz red wine vinegar
1 teaspoon cumin
1 pinch salt and pepper
⅝ teaspoon granulated garlic
2 ⅜ teaspoons parsley, dried
⅜ tablespoon oil
1 oz water
1 dash house seasoning
1 oz cilantro, fresh chopped
Preparation
Mix the lime juice, vinegar, spices, oil, and water in another plastic bowl. Season with salt and pepper or house seasoning
Drain and wash the black beans. In a bowl, add the beans, peppers, and cilantro. Mix well, then add the wet mix to the beans
Place in an oven-able pan, cover with film wrap and then foil, shiny side in and bake at 325℉ for 45 minutes or until hot through
