Ingredients
1 lb chicken breast, grilled, diced small
1 oz oil
4 oz mayonnaise
1 tablespoon relish
1 tablespoon grainy mustard
1 oz toasted almonds, crushed
1 pinch salt and pepper
12 sliced red grapes
Preparation
Preheat oven 350ºF & grill
Season chicken with salt, pepper, and oil. Grill mark the chicken on both sides and then place in the oven for 20 minutes; cool and dice small
Whisk mayonnaise, mustard, almonds, and seasoning; add the chicken, mix, and let stand for at least 2 hours. When serving, add the sliced grapes on top and serve with fresh lettuce wraps or your favourite crackers
