Ingredients
1 ⅓ cups water, boiling
⅓ teaspoon salt
½ cup quick grits
¼ lb BBQ chicken
1 pinch of salt & pepper
Preparation
Preheat the oven to 350ºF.
Boil water and add salt. Gradually stir in the grits, stirring continuously for 5 minutes, then cover and reduce to low heat.
Season the grits with salt and pepper, then mix in the BBQ chicken thoroughly. Spoon the mixture into greased muffin pans.
Bake at 350°F or 10 minutes or until firm. Allow to stand in the pan for 5 minutes before removing. Serve with a Cajun butter sauce.
