Short Description
Black beans are simmered with red bell pepper, lime juice, red wine vinegar, cumin, garlic, parsley, and fresh cilantro, then baked until hot and flavourful—a perfect side dish with a zesty kick.

Ingredients
1 qt black beans, washed
⅓ cup diced red bell pepper or roasted red pepper
1 oz lime juice
¾ oz red wine vinegar
1 teaspoon cumin
1 pinch salt and pepper
⅝ teaspoon granulated garlic
2 ⅜ teaspoons parsley, dried
⅜ tablespoon oil
1 oz water
1 dash house seasoning
1 oz cilantro, fresh chopped
Preparation
Combine the lime juice, vinegar, spices, oil, and water in a separate plastic bowl. Add salt and pepper or house seasoning to taste.
Rinse and drain the black beans. In a bowl, combine the beans, peppers, and cilantro. Mix thoroughly, then incorporate the wet mixture into the beans.
Transfer to an oven-safe pan, cover with plastic wrap followed by foil with the shiny side facing in, and bake at 325°F for 45 minutes or until heated through.
