Short Description
A savoury crab cake mixture made with lump crabmeat, green onions, mayonnaise, seasoning, and white breadcrumbs, gently combined for a delicate texture. Perfect for stuffing mushrooms and baking until golden brown for a flavourful appetizer or side.

Ingredients
48 mushrooms, medium
½ lump crabmeat
2 green onions, sliced
1 ⅛ teaspoons Florida Bay Seasoning or Zatarain's
4 oz Hellman mayonnaise
3 oz white breadcrumbs
Preparation
Remove any shells from the crab meat and transfer it to a bowl. Chop the green onions and combine them in a bowl with the mayonnaise and seasoning. Add ½ cup of breadcrumbs and mix gently using a plastic spatula. If the mixture remains too wet, incorporate a bit more breadcrumbs.
Clean the mushrooms and remove their stems. Stuff the mushrooms with the crab meat mixture until it's all used up. Arrange them on a baking sheet and bake at 350°F for 12 minutes until they turn brown.
