Ingredients
1 pie crust (9-inch)
12oz heavy cream
6 eggs, whipped
2 cups diced fresh asparagus, steamed or sautéed
2 cups cheddar cheese
Preparation
Preheat oven to 275ºF
Prick the pie shell with a fork and par-bake the shell at 275°F for 10 minutes; remove and turn the oven up to 325ºF
Mix the eggs, water, and heavy cream in a bowl. Season with salt and pepper
Steam or sauté the asparagus. When the shells are ready, add ½ of the cheese on the bottom, then add the asparagus and top with the rest of the cheese
Pour the wet mixture into the shell and make sure that everything is covered
Place in the oven and bake at 325°F for 1 hr or until firm. Remove and let cool
