Ingredients
1 pie crust (9-inch)
12oz heavy cream
6 eggs, whipped
2 cups diced fresh asparagus, steamed or sautéed
2 cups cheddar cheese
Preparation
Preheat the oven to 275ºF.
Use a fork to prick the pie shell and par-bake it at 275ºF for 10 minutes. Remove it from the oven and increase the temperature to 325ºF.
In a bowl, combine the eggs, water, and heavy cream. Season with salt and pepper.
Steam or sauté the asparagus. Once the shells are ready, place half of the cheese on the bottom, then add the asparagus and top with the remaining cheese.
Pour the liquid mixture into the shell, ensuring everything is covered.
Bake in the oven at 3ºF for 1 hour or until firm. Remove and allow to cool.
