Ingredients
4 lbs potatoes, red potatoes
2 cups heavy cream
4 tablespoons unsalted butter
2 sprigs fresh thyme, fresh sage, and fresh rosemary
2 cloves garlic, cracked
1 pinch salt and white pepper
8 cups Parmesan cheese
Preparation
Preheat the oven to 400°F.
Cut the potatoes into slices, place them in a bowl, and toss with salt and pepper. Then, transfer them to a baking dish.
In a pot, combine the cream, butter, herbs, and garlic, and simmer until the flavours meld. Season with salt and pepper.
Pour the strained cream mixture over the potatoes and top with Parmesan cheese.
Bake for 30 to 35 minutes or until the top is golden brown. Cover to keep warm.
