Ingredients
Dressing:
5.5 oz olive oil
4 tablespoons lime juice
2 tablespoons red wine vinegar
2 teaspoons chopped garlic
1 ½ teaspoon cumin powder
3 teaspoons oregano
½ teaspoon sugar
2 pinches salt
¼ teaspoon black pepper
Filling:
30 oz black beans, canned, rinsed
30 oz corn, rinsed
1 cup red onion, diced small
1 cup tomato, diced small
1 cup red pepper, diced small
4 jalapeños, seeded and diced
½ cup cilantro leaves, whole, chopped
Preparation
In a bowl, combine all the dressing ingredients together
In another bowl, combine the black beans, corn, red onion, tomato, pepper, jalapeño and cilantro
Pour dressing over and mix. Let stand for 2 hours before serving
