Ingredients
2 cans black-eyed peas, drained (19oz cans)
7 green onions, chopped
3 Roma tomatoes, diced
1 bunch cilantro, chopped coarsely
Dressing:
5 tablespoons sugar
⅝ cup olive oil
4 cloves garlic chopped
3¾ tablespoons balsamic vinegar
⅝ teaspoon salt
1 bag tortilla chips
Preparation
Wash and drain the peas, and add green onions, tomatoes, and cilantro to a bowl. In another bowl, add the dressing ingredients together and whisk them together
Then add the dressing to the pea mixture and mix; let stand for at least 5 hours
Serve with tortilla chips
