About the Recipe

Ingredients
½ gallon game stock or chicken stock
1 lb of cooked diced chicken
4 large potatoes, diced
⅔ large onion, diced
2 leeks, chopped fine
1 celery, chopped fine
1 spice bag, bay leaf, rosemary, thyme all fresh
2 oz butter
salt and pepper
Preparation
In a stockpot, cook all the ingredients, except for the potatoes, in butter or bacon fat along with the spice bag until they become soft. Then, add the stock and potatoes to the pot and let it simmer for 30 minutes or until the potatoes are tender. After that, add the diced cooked chicken.
The soup will thicken as the potatoes cook, so season it to taste.
