Short Description

Refreshing chilled soup made with a blend of fresh fruits ideal as a starter or a light dessert.

Ingredients

1 cup Fruit Puree-any kind, strain for seeds

1 cup champagne dry

fresh mint


Simple Syrup:

1 cup sugar

1 cup water

Preparation

Bring the sugar and water to a boil and then let cool


In a blender or food processor, puree the fruit until smooth. If using fruit with seeds, strain it through a sieve


Once the simple syrup is cool, add the fruit and mix well. When ready to serve, add the champagne and mix. Garnish with fresh fruit and some mint
