For a delightful and quick Italian dinner, we turned to our homemade Cannelloni, a dish that not only brings comfort but also showcases the love and effort put into cooking. The Cannelloni was prepared in a large batch during the festive Christmas holidays, a time when the kitchen is filled with the aromas of traditional Italian cooking. After crafting these delicious pasta tubes filled with a savoury mixture, we portioned them out carefully and froze some for later use, ensuring that we could enjoy this meal even on the busiest of days. To complement the Cannelloni, we also prepared a rich and creamy Béchamel Sauce, which was made from scratch. This sauce was also portioned and frozen, allowing us to have it readily available for a variety of recipes we might be making in the future. The convenience of simply pulling it from the freezer, thawing it, heating it up, and serving it makes weeknight dinners not only easier but also more enjoyable.

Turning our attention to the Caprese Salad, the ingredients we use are pretty standard in our kitchen, reflecting our commitment to fresh and flavourful food. We always have a selection of tomatoes on hand, whether they are ripe and juicy heirloom varieties or vibrant cherry tomatoes. Fresh Basil, which we cultivate in our garden, is a staple that we cherish, especially during the winter months when we bring it indoors to protect it from the cold. To elevate the flavours of the Caprese Salad, we drizzle it with a Balsamic Glaze that adds a perfect balance of sweetness and acidity. For this particular preparation, we chose a Persian Lime infused Olive Oil from the Kingston Olive Oil Company, which contributed a unique and refreshing citrus note to the dish, enhancing the overall flavour profile and making it a delightful accompaniment to our Cannelloni.
