Ingredients
2 ½ lbs potatoes
1 teaspoon of chicken base
2 tablespoons of butter
1 oz heavy cream
1oz of vegetable oil
8 oz carrots, diced small
2 teaspoons chopped garlic
6 oz corn, frozen
1 cup cheddar cheese
salt and pepper
Preparation
Boil the potatoes with chicken base and water until soft, then drain and transfer to a mixing bowl, whipping them until they are light and fluffy. Add the cream and butter.
In a skillet, heat the oil and add garlic, carrots, and corn, sautéing for 2 minutes over medium heat.
Set the mixer to low and incorporate the sautéed vegetables, followed by the cheese, seasoning to taste. If desired, transfer the mixture to a baking dish and bake at 350°F for 20 minutes to achieve a crispy top.
