Ingredients
4 oz chorizo, cooked and chopped
2 cups cheddar cheese
2 chipotle chilli canned in adobo, de-seeded and chopped
1 pinch cilantro
4 green onion, sliced ⅛" thick
4 flour tortillas, 6 inch

Preparation
In a skillet, cook the sausage with the casing removed. Once cooked, chop it in a food processor. Place in a bowl and mix with the chipotle chiles, green onions and cilantro mix
On a grill or in a skillet, spray the shells with pan spray on one side, and lightly brown or grill mark. Place on a sheet pan and add ¼ cup of cheese on half of the shell, then add 1 oz of the mix and another 2 oz of cheese. Fold in half and place on a clean baking sheet with baker's paper
Bake in oven at 350°F for 6 minutes until cheese is melted, cut and plate. Serve with salsa and sour cream
