Coffee Rubbed Filet, Fresh Swiss Chard and Howe Island Potatoes

This tasty beef filet was freshly cut from a beef tenderloin we had just cleaned early that day. You can't go wrong with triple-A beef from Alberta. Seasoned with a coffee rub and seared very quickly on the grill. The potatoes came from a local farm on Howe Island, and were very delicious, tasting as a potato should. A little bacon fat on them, salt, pepper and paprika in a skillet and then the oven


Swiss Chard sauteéd with butter, of course, a little salt and pepper from our local CSA along with the peppers. Always nice to have fresh garden vegetables and support our local farmers
